I'm going for it. Going to stick to it faithfully for one month and see how I feel. After reading, watching videos and talking to my sister and dad (who started about three weeks ago), I thought - why not give it a try? I've collected several recipes that sound good and even enough that are "Jim proof" (i.e. no nightshades), which I was concerned about. I imagine he will do it when it suits him and eat what he wants when I'm not around (ha ha).
So here's my very first attempt at a vegan dish - something simple - chili.
Have to admit, upon tasting it I would have never guessed it was vegan. It's yummy! Used "textured vegetable protein" - you'd think there was ground meat in the chili. (No worries - I'm not being mean to Jim. He's gone on a business trip next week.)
If I can find enough dishes that I like as much as this chili, no problem! : )
